If the floor, the shower and the vanity are all near the end of their life, replacing them in separate projects means opening the same walls and floor more than once and matching new finishes to old ones each time. A full renovation lets you settle the layout before anything is ordered: whether the shower takes over the tub alcove, whether a double vanity is worth giving up a linen closet, whether the toilet can move a few inches to make the door swing work. Those decisions drive plumbing, framing and electrical, so they belong at the start.
